Baisa Tea Gathering, August & September: Withered Sencha

Touch the leaf, roll it, make tea.
An announcement for our tea-making workshop.

We hold this workshop under the name “Baisa Tea Gathering”.
From April through July, buying trips and department store events kept us busy and the gatherings were paused; from August they resume.

The theme for August and September is “touching the leaf <withered sencha>”.
As in March, this is a workshop in which you handle the leaf yourself and follow the path from a single leaf to a single cup of tea.

This time we will be making withered sencha.
Withering (icho) is the step in which freshly picked leaf is laid out in a well-ventilated place for a time, losing moisture and going limp.
It is also needed when making black tea and oolong, and while it is under way the room fills with a scent of sweet flowers, fruit and honey.

Unlike the green, grassy sencha made by steaming the leaf immediately after picking, the result is a tea with a floral fragrance.

For making withered sencha we have set aside leaf that was rested overnight after picking and then frozen.

After the last gathering, many of you told us you wanted to take the tea from the very beginning to the very end.
So this time we have set aside days that run the whole process through, as well as days split into a first and second half as before.

Full process : Sat 24 Aug, Mon 23 Sep (public holiday)
First half only: Sat 7 Sep
Second half only: Mon 16 Sep (public holiday)

The full-process days run 12:30–17:30, about five hours; depending on how the day goes it may take around six. Please allow plenty of time.
On the half days, we plan on 12:30–15:00, about two and a half hours.
Six places per day, reservation required.
