Baisa Tea Gathering, February: Finishing Sencha

An announcement for our February workshop, the “Baisa Tea Gathering”.

Leaf picked in the tea garden is processed by the farmer into what is called aracha, or rough tea.
It is then finished at a tea wholesaler, and that is how tea normally reaches the shelf.
This workshop lets you experience the wholesaler’s part of the work: turning aracha into finished tea.

Aracha contains hard leaves, stems, fine hairs and dust. To keep it well, all of this has to be separated part by part — using sieves, air flow and static electricity — and dried.
In this workshop we do the finishing by hand, the old way.
Using sieves, a hand winnowing tray and a static separator, you will sort the leaf by hand and feel it as you go.

Once the finishing is done, the leaf is fired to draw out its flavour, and you take it home with you.
